The Leek & Potato Soup That Makes Winter Feel Softer
A creamy, cozy European classic that kids love—and even works as a healthier dipping sauce.
Leek and potato soup is one of the most comforting winter dishes across the UK, France, and Northern Europe. It’s smooth, mild, budget-friendly, and beautifully creamy without relying on heavy ingredients. The sweetness of the leeks blends perfectly with the softness of the potatoes, creating a velvety texture that feels warm and nourishing on cold days.
This soup is incredibly versatile: serve it in bowls with crusty bread, pack it into a thermos for lunch, or—my personal favorite—use it as a dipping sauce for kids who normally reach for mayonnaise! Blended soups like this are soft, gentle, and easy for children to enjoy, while giving them something far healthier than processed dips. It’s a true winter staple and one of the first soups Europeans learn to make at home.

Why You’ll Love This
Because it’s creamy cozy, and super simple! I once served this as a dip for a kid who refused to eat anything green. He thought it was “fancy mayonnaise” and finished half the bowl.
Time: 20-30 minutes · Difficulty: Easy
Ingredients
- Leeks — 350–400 g (cleaned and sliced)
- Potatoes — 350 g, peeled and diced
- Onion — 80 g, finely diced
- Garlic — 6–8 g, minced
- Butter — 15 g
- Olive oil — 15 ml
- Vegetable or chicken stock — 1,000 ml (1 litre)
- Cream or milk — 50–80 ml (optional)
- Salt & black pepper — to taste
- Fresh chives or parsley — 2–3 g, chopped
How To Make It
- Prepare the leek
Slice the leeks lengthwise, rinse thoroughly to remove any soil, then slice into thin half-moons. - Sauté the base
Heat the olive oil and butter in a pot. Add the onion and cook until soft.
Add the garlic and leeks, and sauté until fragrant and slightly wilted. - Add the potatoes
Stir in the diced potatoes and coat them with the aromatics. - Pour in the stock
Add the hot stock, season lightly, and bring to a gentle simmer. - Cook until tender
Simmer for 15–20 minutes until the potatoes are very soft. - Blend until smooth
Use an immersion blender to blend into a silky, creamy soup. (If using a regular blender, work in batches carefully.) - Finish with cream
Stir in cream or milk for extra richness, if you like. - Serve
Season to taste and top with chives or parsley. A drizzle of olive oil on top makes it look café-style.
Good To Know
- Wash leeks thoroughly—they often hide soil between layers.
- Waxy potatoes (like Yukon Gold) create the smoothest texture.
- For dairy-free, skip the cream; the soup is naturally creamy from the potatoes.
- A squeeze of lemon brightens the flavour and balances richness.
- The soup thickens after cooling; thin it with a splash of stock or milk when reheating.
- Kids love dipping bread, roasted veggies, or chicken strips into this soup instead of mayonnaise.
